If I'm not mistaken you still need a wali, and since your father is non-Muslim I believe it is your local Imam who would take his place. You should ask him if I have given you the correct information. Maybe it could be your brother, if he's old/mature enough.

It is interesting that your parents are not Muslims and only you (at the age of 23) and your brother have embraced Islam. No non-Muslim can convert into a Muslim unless he/she understands Islam's system of belief with his/her own free will and consciousness. In my opinion you have done a task which most of the people in Muslim families don't even try.

As for as consent of parents for marriage is concerned, there is difference of opinion amongst Muslim scholars. I am not a scholar but I have nowhere found it mandatory in Quran especially when the couple is a major.
In your particular situation, the consent of parents is not required at all. Once you have embraced Islam, you are free to decide your marriage without any kind of interference from your parents. Allah shall help you!
