I have also read very little material on the issue of Muslim Christian Marriages. The reason may be either Muslim scholars have spent very little time on the issue or such situations don't occur too often. Whatever the reason may be I don't have knowledge yet of any book on Muslim Christian Marriage issues.
However, I promise one thing. As soon as I found such a book or some visitor of my site pointed out, I shall intimate you. The visitors are requested to pinpoint such an information or material either in posts or at Feeback form (on left side menu) to help Tangie.
I am not a scholar of any kind. However, after receiving your feedback I am thinking to write some pages on this issue. But I shall take time to find, study and analyze such a material. Please subscribe to my RSS/XML feeds (left-top home page) to get up to date information whenever it is available.
As far as issue of Muslim beliefs is concerned, there are dozens of sects of Islam. All of them preach different issues in different ways under the light of opinions of their specific group of scholars. However, I have visited a website which claims to interpret Islam in the light of Quran. Though the followers are impressed with the opinion of Ghulam Ahmed Pervaiz, yet most of the information is logical and unambiguous. The link is given here:

Many Muslims from other sections disagree with certain beliefs expressed on this site. But the issue is the same with all sects of Islam and their beliefs. In my opinion, the link given is the best site on the issue of beliefs of Islam.
